Broccoli cream
(broccoli, potato, onion)
This easy vegan recipe serves 4 people as a first dish, needs 30 minutes to be prepared.
All the ingredients should preferably have organic origins.
- 500 gr (17.6 oz) broccoli
- 1 onion
- 5 medium potatoes
- 2 tablespoons extra virgin olive oil
- Salt to taste
Wash all the vegetables. Peel the potatoes. Cut all the vegetables coarsely. Cook them in a pot for 30 minutes, adding 2 cups of vegetable stock. Then add salt and process in blender. Serve hot with freshly ground black pepper and a drizzle of olive oil. Garnish as you want (seeds of quinoa, tomatoes, toast, fried dough etc)
* Enjoy it with a young red wine.
