Risotto, carrots, chicken curry and bean sprouts
(Rice, carrots, minced chicken, bean sprouts)
This medium white meat recipe serves 4 people as a first dish, needs 45 minutes to be prepared.
All the ingredients should preferably have organic origins.
- 320 gr (11.2 oz) Carnaroli rice
- 300 gr (10.5 oz) minced chicken
- 100 gr (3.5 oz) grated carrots
- 130 gr (4.5 oz) finely chopped onions
- 50 gr (1.7 oz) bean sprouts
- 100 gr (3.5 oz) Gouda cheese (small cubes)
- 1 teaspoon curry
- A pinch of pepper
- 4 tablespoons extra virgin olive oil
- Vegetable broth as needed
- 50 gr (1.7 oz) butter
- Salt to taste
First of all, mix well together 30 grams of onion, minced chicken, salt, pepper and curry and make meatballs (1.5-2cm or 0.5-0.7in in diameter). Cook them in a pan with 2 tablespoons of oil.
Meanwhile, in a saucepan cook onion and carrot with butter, 2 tablespoons of oil and a little of warm broth, stirring often for 20 minutes. At this point, toast the rice and then add broth as needed and cook for about 20 minutes. Then add cheese and stir well.
Finally, put the bean sprouts on top and the meatballs around. Serve!
* It is a tasty dish with a pleasant taste of softness and crunchiness at the same time. Enjoy it with a glass of a structured white wine.
